Marriott International, Culinary Future in Asia Pacific 2026, Ettravelworld

Marriott International has released a new report examining how dining trends will evolve in Asia Pacific to 2026. The findings show immersive dining experiences and immersive dining experiences that prioritize personal connection and creativity over traditional fine dining, with comfortable luxury, locally inspired menus.

Research faces the perspectives of more than 30 culinary experts and recognition of food and beverage teams across 270 properties in 20 markets. Together, the concepts reveal a new culinary mindset where food is an expression of identity, heritage and emotion.

“The Future of Food 2026 is how Asia Pacific continues to shape the future of global food,” said Petr Raba, China, Marriott International’s Vice President of China Food and Beverage, Asia Pacific. “Since dining focused on the rise of casual luxury, today’s guests seek emotional connection as much as culinary excellence. This report reflects our continued commitment to delivering industry-evolving and culturally connected dining experiences that work again for a new generation of travelers.”

He added, “A new culinary language is emerging between Asia, where quality meets comfort, luxury meets experience, and food is no longer about food, it’s about engaging all the senses.”

Key trends include the rise of casual casual dining, where comfort food replaces formal multi-course menus. About 59% of Marriott properties surveyed reported a growing preference for casual luxury dining. Directors are increasingly looking for multiple experiences with 48% of F&B teams seeing a higher demand for interactive and theatrical food.

Local sourcing is also gaining momentum with 85% of Marriott properties incorporating regional ingredients into their menus. Meanwhile, AI and digital tools are transforming operations, with 76% adopting ordering technologies and 75% acknowledging the growing influence of social media on dining choices.

Emerging hotspots such as Indonesia, Vietnam, the Philippines and mainland China traditionally receive international acclaim for radical innovation. Third-generation Asian chefs blend heritage with a contemporary flair, reflecting a broader movement to redefine modern Asian cuisine.

Across the region, sustainability, smart consumption and health are shaping the culinary future. Marriott’s report calls for vegetarian, vegan and gluten-free options and a cocktail culture growing towards lower alcohol and ingredient experiences.
